  • 2 sheets refrigerated pie crust
  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar (for sprinkling)
  • Mini chocolate chips or black decorating gel (for eyes)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, mix blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat until thickened (about 5 minutes).
  3. Roll out pie crusts and cut out ghost shapes using a cookie cutter.
  4. Place half of the shapes on the baking sheet and spoon blueberry filling onto each. Top with remaining shapes and seal edges.
  5. Brush tops with beaten egg and sprinkle with coarse sugar. Add mini chocolate chips for eyes.
  6. Bake for 18-20 minutes until golden brown.
