  • 1 teaspoon lime juice
  • 2 teaspoons sweet paprika; divided
  • pepper to taste
  • Food safe dyes: liquid (red), gel (yellow and green), and powder (red)

Instructions

  1. Cook the Eggs: Place eggs on a rack in an Instant Pot with 1 cup of water. Secure the lid and cook on high pressure for 5 minutes. Let sit for 3 minutes before releasing pressure.
  2. Cool Down: Transfer cooked eggs to cold water to stop further cooking and make peeling easier.
  3. Create Bloodshot Eyes: Crack three eggs gently and soak in red food coloring mixed with water until desired shade is achieved.
  4. Prepare Filling: Mash avocado and mix with salt, mustard powder, paprika, and lime juice until smooth.
  5. Assemble: Peel eggs under running water, slice them, mix yolks with mayonnaise and seasonings, then pipe back into egg halves creating spooky designs.
