  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Position each potato between two chopsticks or skewers to prevent cutting all the way through. Slice vertical slits about ⅛ inch apart.
  3. Place sliced potatoes on an unlined baking sheet and brush half of the melted butter over them, ensuring butter seeps into the slits.
  4. Season generously with kosher salt and pepper.
  5. Bake in the preheated oven for 30 minutes; then gently pull apart the layers to allow more butter to seep in.
  6. Brush the remaining melted butter on top and return to oven for another 30-35 minutes until crispy and tender.
