  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups shredded sharp cheddar cheese
  • Fresh parsley, chives, thyme
  • Salt and black pepper

Instructions

  1. Peel and cube the Yukon Gold potatoes, rinsing them under cold water.
  2. In a large pot over medium heat, melt butter (or olive oil) and sauté chopped onions until translucent.
  3. Add minced garlic and cook until fragrant.
  4. Stir in flour to create a roux; cook for about two minutes.
  5. Gradually whisk in broth while scraping the bottom of the pot.
  6. Add potato cubes and simmer until tender (15-20 minutes).
  7. Blend half of the soup until smooth and return to pot.
  8. Stir in milk (and cream if using), then add fresh herbs.
  9. Gradually mix in shredded cheddar until melted.
  10. Season with salt and pepper, then serve with your favorite toppings.
