  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)

  • 1/3 cup apple vinegar
  • Fresh thyme
  • Bay leaves
  • Smoked paprika

Instructions

  1. In a heavy-bottomed Dutch oven over medium-low heat, sauté diced onion and carrot until translucent.
  2. Add minced garlic and cook briefly until fragrant.
  3. Stir in rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar; let simmer until most vinegar evaporates.
  4. Whisk whole wheat pastry flour into vegetable stock and pour into the pot; bring to a simmer.
  5. Add smoked paprika and cloves; cook until jackfruit is fork-tender (about 45 minutes).
  6. Gently stir in gnocchi, tomatoes, and peas; cook until gnocchi float.
  7. Season with salt and pepper; remove thyme sprigs and bay leaves before serving.
