  • 24 ounces fresh green beans
  • 4 medium shallots
  • 8 ounces baby bella mushrooms
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 tablespoon Dijon mustard
  • 1/2 cup freshly grated parmesan cheese
  • 1 cup vegetable oil
  • 4 tablespoons unsalted butter
  • 1 tablespoon garlic
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon ground nutmeg
  • kosher salt & freshly ground black pepper (to taste)

Instructions

  1. Prepare the shallots by frying them in vegetable oil until golden brown and crispy. Set aside.
  2. Blanch trimmed green beans in salted water for about 3-4 minutes, then drain.
  3. In a pan, sauté sliced mushrooms in butter until soft; add minced garlic and cook briefly.
  4. Stir in flour to create a roux, then gradually whisk in chicken broth, lemon juice, mustard, thyme, salt, pepper, and cream. Simmer until slightly thickened.
  5. Mix blanched green beans with the mushroom sauce in a baking dish and sprinkle half the parmesan on top.
  6. Bake at 350°F (175°C) for about 20 minutes; top with fried shallots and remaining cheese before baking for an additional 5 minutes.
