  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions, for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve some pasta water before draining.
  2. Season cubed chicken with salt and pepper. Heat olive oil in a skillet and sauté chicken until golden brown; set aside.
  3. In the same skillet, add remaining olive oil and sliced carrots; cook until softened, then add minced garlic.
  4. Reduce heat and stir in butter, honey, soy sauce, and black pepper; simmer for about 2-3 minutes.
  5. Return chicken to the skillet and combine everything with the cooked pasta; adjust consistency with reserved pasta water if needed.
  6. Serve warm topped with chopped green onions.
