  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare your crust by mixing graham cracker crumbs with melted butter and sugar. Press into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla extract. Mix in eggs one at a time, then fold in sour cream.
  3. Pour the cheesecake filling over the crust.
  4. Prepare the apple layer by tossing diced apples with brown sugar, cornstarch, cinnamon, water, and lemon juice. Spread over the cheesecake filling.
  5. For the crumble topping, mix flour, brown sugar, cinnamon, and cold butter until crumbly. Sprinkle over the apples.
  6. Bake for about 65 minutes or until set but slightly jiggly in the center. Cool gradually before slicing.
