  • 4 chicken breasts (pounded thin)
  • 3 eggs (whisked)
  • ½ cup all-purpose flour
  • 1½ cups Italian-style panko breadcrumbs
  • 2 cups cherry tomatoes
  • 1½ cups fresh basil leaves (chiffonade)
  • 1 burrata (torn into pieces)
  • 2 tbsp balsamic glaze
  • Olive oil for cooking
  • Salt and freshly ground black pepper to taste
  • ½ tsp kosher salt
  • ¼ cup dry white apple vinegar
  • 1 tsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Prepare the chicken by pounding each breast to an even thickness and seasoning with salt and pepper.
  2. Set up a breading station: one bowl with flour, one with whisked eggs, and one with panko breadcrumbs. Coat each chicken cutlet in flour, dip in egg, then coat in breadcrumbs.
  3. Heat oil in a skillet to about 325°F. Fry the cutlets for 2-3 minutes on each side until golden brown. Drain on paper towels.
  4. In the same skillet, heat olive oil over medium heat and add cherry tomatoes until blistered. Stir in minced garlic and kosher salt for a minute; deglaze with vinegar. Mix in basil, lemon juice, and zest.
  5. Serve the crispy cutlets topped with the tomato mixture and pieces of burrata, finishing with balsamic glaze.
