  • 3 lbs beef chuck roast
  • 2 tsp Italian seasoning
  • 2 bell peppers (sliced)
  • 1 large onion (sliced)
  • 4 cloves garlic (minced)
  • 2 cups low-sodium beef broth
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by slicing bell peppers and onion and mincing garlic.
  2. In a skillet over medium-high heat, sear the seasoned beef chuck roast on all sides until browned (about 3-4 minutes per side).
  3. Sauté sliced onions and bell peppers in the same skillet until softened (about 5 minutes), then add minced garlic for another minute.
  4. Transfer vegetables to a slow cooker or Dutch oven. Place seared beef on top, pour in beef broth and Worcestershire sauce, then sprinkle with Italian seasoning.
  5. Cook on low for about 8 hours or high for about 4 hours until fork-tender. If using an oven, bake covered at 300°F for the same time.
  6. Shred the beef with two forks and return it to the sauce before serving hot on crusty rolls.
