  • 1/2 lb ground beef
  • 1/2 lb ground beef (85/15 meat to fat ratio)
  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. In a bowl, mix ground beef, bread crumbs, grated parmesan, egg, minced onion, garlic cloves, parsley, basil, salt, and pepper until well combined. Form into small meatballs.
  2. Heat olive oil in a large pot over medium heat; brown the meatballs on all sides. Remove and set aside.
  3. Sauté diced onions and carrots in the same pot until soft. Add diced tomatoes and minced garlic; cook until fragrant.
  4. Pour in water and beef stock along with tomato paste; bring to a gentle simmer.
  5. Return meatballs to the pot with seasonings; simmer for 20 minutes.
  6. Add gnocchi during the last few minutes of cooking; allow to puff up.
  7. Serve hot with fresh parmesan cheese sprinkled on top.
