  • 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 cup breadcrumbs (gluten-free if desired)
  • 1 large egg (or 1 flax egg made from 1 tbsp ground flaxseed and 2.5 tbsp water)
  • Burger buns (whole grain or gluten-free)
  • Your favorite toppings (lettuce, tomato, pickles, etc.)

Instructions

  1. Drain and rinse the jackfruit. Shred it using your hands or forks until it resembles pulled meat.
  2. In a skillet over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. In a large bowl, combine shredded jackfruit, sautéed onions, garlic, smoked paprika, ground cumin, breadcrumbs, and egg (or flax egg). Mix well.
  4. Form the mixture into four patties about half an inch thick.
  5. Heat oil in the skillet over medium-high heat and cook each patty for about four minutes per side until golden brown.
  6. Assemble burgers on buns with your chosen toppings.
