Ingredients

  • 2 lb thin-sliced beef (or substitute with chicken, tofu, or shrimp)
  • 1 lb Korean sweet potato noodles (glass noodles)
  • 3 medium carrots, julienned
  • 1 large white onion, thinly sliced
  • 1/2 bunch green onions, chopped
  • 6 garlic cloves, minced
  • 1/2 lb spinach leaves
  • 4 tbsp sesame oil
  • 1 tbsp olive oil
  • 6 tbsp soy sauce (or tamari for gluten-free)
  • 3 tbsp brown sugar

Instructions

  1. Cook the glass noodles in boiling water for about 5-6 minutes until tender. Drain and set aside.
  2. In a skillet over high heat, cook the beef (or chosen protein) until browned. Season with half of the soy sauce, sesame oil, and brown sugar.
  3. In another skillet, sauté carrots and onion in olive oil until softened. Add remaining soy sauce, sesame oil, garlic, and green onions.
  4. Stir in spinach leaves until wilted.
  5. Combine cooked noodles with sautéed veggies and seasoned protein in a large bowl.
  6. Serve warm garnished with additional green onions if desired.
