  • 1 ¼ lbs. boneless skinless chicken breast
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ cup dry white grape juice
  • 6 cups chicken broth
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season chicken with lemon pepper seasoning and sear for 3-4 minutes on each side until golden.
  2. Remove chicken and deglaze the pot with white grape juice, reducing it by half. Add butter, diced onions, carrots, celery, and minced garlic; sauté for about five minutes.
  3. Stir in dried herbs and hot sauce, then add chicken broth and bring to a boil. Return the chicken to the pot and simmer until cooked through.
  4. Cook orzo separately according to package instructions until al dente; drain.
  5. Reduce heat to low, stir in heavy cream and Parmesan cheese until smooth. Fold in spinach until wilted.
  6. Squeeze fresh lemon juice into the soup before serving over cooked orzo.
