  • 2 tbsp melted butter
  • 1/2 cup heavy whipping cream
  • 1/2 cup lemon Greek yogurt (or lemon curd mixed with whipped cream)
  • 1 tbsp powdered sugar
  • 1/2 tsp lemon extract
  • 1/4 cup lemon curd
  • 1 1/2 cups white chocolate or yellow candy melts

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter and pressing into mold cavities. Freeze for 10 minutes.
  2. Whip heavy cream until soft peaks form. Fold in lemon Greek yogurt, powdered sugar, and lemon extract. Chill for 10–15 minutes.
  3. Melt white chocolate or candy melts; coat mold cavities and chill until set.
  4. Pipe mousse into each cavity, add lemon curd in the center, then top with more mousse.
  5. Seal with crusts and freeze for at least 4 hours until set.
  6. Unmold and thaw for 10–15 minutes before serving.
