  • ¼ cup granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 1½ cups whole milk
  • ¾ cup granulated sugar (for custard)
  • 3 large egg yolks (for custard)
  • ¼ cup cornstarch
  • Zest of 1 lemon
  • ½ cup fresh lemon juice

Instructions

  1. For the crust, mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Add egg yolk and cold water until dough forms. Chill for 20-30 minutes.
  2. Preheat oven to 350°F (175°C). Prick the crust with a fork and bake for 12-15 minutes until golden. Cool slightly.
  3. For the custard, whisk sugar, cornstarch, lemon zest, and egg yolks in a saucepan over medium heat. Gradually stir in milk until smooth and thickened. Remove from heat; stir in lemon juice and butter.
  4. Pour custard into the pre-baked crust and bake for an additional 25-30 minutes until just set. Cool completely before slicing.
