  • 4 large eggs (separated)
  • 1 cup granulated sugar (divided)
  • 2 tablespoons cornstarch (or sifted cake flour)
  • 1 teaspoon vanilla extract (or lemon zest)
  • A pinch of salt
  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat your oven to 325°F (160°C) and line an 8-inch springform pan with parchment paper.
  2. Separate the egg whites from the yolks, ensuring no yolks mix with the whites. Beat egg whites until frothy, gradually adding 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, vanilla or zest, cornstarch, and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yogurt mixture to loosen it. Then fold in the remaining egg whites gently until just combined.
  5. Pour batter into the prepared pan and place in a larger baking tray filled with hot water (bain-marie). Bake for 50–60 minutes until golden and a toothpick comes out clean.
  6. Allow to cool in the oven with the door slightly ajar for about 15 minutes before removing.
