  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp fruit juice (as a substitute for limoncello)
  • For coating: 50 g granulated sugar
  • 30 g powdered sugar

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, massage lemon zest into granulated sugar until fragrant.
  3. Sift almond flour into a large bowl and mix in lemon sugar.
  4. In another bowl, whip egg whites with salt until stiff peaks form.
  5. Gently fold in almond extract and fruit juice, then gradually add the almond flour mixture.
  6. Prepare two shallow bowls with granulated and powdered sugars for rolling.
  7. Scoop dough into balls, roll in sugars, and place on baking sheet with space between each cookie.
  8. Bake for 22-25 minutes or until tops are cracked and bottoms are golden brown.
  9. Transfer to a wire rack to cool before serving.
