  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the finely chopped onion until translucent, about 3-4 minutes. Add garlic and cook for another minute.
  2. Stir in chopped tomatoes, ground cumin, paprika powder, turmeric, tomato paste, salt, and black pepper. Simmer for about 5 minutes.
  3. Incorporate both canned and dry white beans into the pot with one cup of veggie broth. Stir well.
  4. Cover and let simmer on low heat for 20 minutes (or seal in an Instant Pot for 10 minutes at high pressure).
  5. Adjust consistency with more veggie broth if desired; taste and adjust seasoning before serving.
