  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a large bowl, combine the onions, bell peppers, cherry tomatoes, garlic, olives, and capers (if using). Drizzle with olive oil and sprinkle with oregano, salt, and pepper; toss well.
  3. Spread the vegetable mixture evenly in the baking dish. Place fish fillets on top and squeeze lemon juice over them. Add lemon zest along with more salt and pepper if desired.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with fresh parsley before serving alongside lemon wedges.
