  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (such as basmati or jasmine)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or basil for garnish

Instructions

  1. In a large skillet or pot, heat olive oil over medium-high heat. Add chicken pieces seasoned with salt, pepper, oregano, paprika, and cumin. Brown on all sides for about 5-7 minutes.
  2. Add chopped onion and minced garlic to the skillet; sauté until fragrant (about 3-4 minutes).
  3. Stir in rice and toast for 1 minute. Add drained diced tomatoes and chicken broth; bring to a simmer.
  4. Return browned chicken to the skillet; cover and reduce heat to low. Cook for 20-25 minutes until rice is tender.
  5. Gently stir in sliced Kalamata olives and crumbled feta cheese before serving. Let sit for a few minutes and garnish with fresh herbs.
