Ingredients

Scale
  • 1 pound sirloin steak
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice, quinoa, or cauliflower rice
  • 1 cup roasted chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (or coconut yogurt)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic, minced (for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)

Instructions

  1. In a bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the sirloin steak to the bowl, ensuring it’s well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Once hot, cook the marinated steak for about 4–5 minutes on each side until it reaches medium-rare doneness. Let it rest after cooking.
  3. Mix together Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl to prepare the tzatziki sauce. Chill until ready to serve.
  4. In a small jar or bowl, whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper until smooth for the lemon vinaigrette.
  5. Divide your chosen base among serving bowls. Top each bowl generously with sliced steak, followed by cherry tomatoes, cucumbers, red onion slices, olives, feta cheese (if using), and fresh herbs.
  6. Drizzle each bowl with your homemade lemon vinaigrette and finish off with a big dollop of tzatziki sauce on top. Serve immediately.
