  • 1 1/2 cups salted butter, softened
  • 1 1/4 cups light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 large eggs
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 12 ounces milk chocolate, melted

Instructions

  1. Cream together softened butter, light brown sugar, and vanilla until fluffy. Add eggs one at a time.
  2. Gradually mix in flour, baking soda, spices, and salt until combined.
  3. Roll out dough to 1/4 inch thick and cut out pumpkin shapes; cut faces into half of the cookies.
  4. Preheat oven to 350°F (175°C). Bake for 8-12 minutes until lightly golden.
  5. Brush tops of half the cookies with browned butter and sprinkle with cinnamon sugar.
  6. Spread melted milk chocolate on the bottom half of each non-faced cookie and sandwich together.
