  • 2 cups sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 4 large eggs (at room temperature)
  • ¾ cup vegetable or canola oil
  • ½ cup sour cream
  • 1 teaspoon pure vanilla extract
  • ½ cup (1 stick) unsalted butter (softened)
  • 1 7-ounce jar vegan marshmallow fluff
  • 2 ½ cups confectioners’ sugar (powdered sugar)
  • 2 to 3 tablespoons milk (preferably whole, or half-and-half, or heavy cream)
  • 48 M&Ms, Skittles, or other small, round colored candies

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, boil 1 ½ cups of water. Remove from heat and whisk in cocoa powder and sugar until smooth. Let cool for 15 minutes.
  3. Combine flour, baking powder, baking soda, and salt in a bowl.
  4. In another bowl, beat eggs, oil, sour cream, and vanilla together. Stir in the cooled chocolate mixture.
  5. Gradually add dry ingredients into the wet mixture until just combined.
  6. Pour batter into lined muffin tins and bake for about 20 minutes or until a skewer comes out clean. Cool completely on a wire rack.
  7. For frosting, blend softened butter, vegan marshmallow fluff, confectioners’ sugar, and vanilla until smooth; adjust consistency with milk if needed.
  8. Decorate cooled cupcakes by piping frosting like mummy bandages and placing candy eyes on top.
