  • 8 oz egg noodle pasta
  • 1.5 lbs cremini mushrooms
  • 1 onion
  • 3 cloves garlic
  • 1/2 cup dry white grape juice
  • 1.5 cups mushroom stock
  • 2 Tablespoons flour
  • 1/2 cup sour cream (or Greek yogurt)
  • 23 sprigs thyme
  • 2 teaspoons dijon mustard
  • 1 teaspoon smoked paprika
  • Sea salt & black pepper
  • 3 Tablespoons butter (divided)

Instructions

  1. Cook the egg noodles according to package directions; drain and toss with butter.
  2. In a skillet, melt 2 tablespoons of butter and sauté the cremini mushrooms until browned.
  3. Remove mushrooms; add onions and garlic to the skillet and cook until softened.
  4. Deglaze the pan with dry white grape juice, scraping up browned bits.
  5. Mix flour with mushroom stock; pour into skillet with mushrooms, thyme, dijon mustard, and smoked paprika. Simmer until thickened.
  6. Temper the sour cream with sauce liquid before combining to prevent curdling.
  7. Season with salt and pepper; serve over noodles and garnish with fresh herbs.
