  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Juice of 1 lemon
  • 1 can marinated artichokes (14 oz)
  • 4 cups fresh baby spinach
  • 2 tsp Italian seasoning
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat a large skillet over medium heat with olive oil. Season chicken breasts with salt and pepper. Sear until golden brown and cooked through (5-6 minutes each side). Remove chicken and set aside.
  2. In the same skillet, sauté minced garlic until fragrant (about 1 minute).
  3. Add orzo and chicken broth; bring to simmer while scraping up bits from the bottom of the pan for added flavor.
  4. Return seared chicken to the skillet along with chopped artichokes and spinach; cover and cook for about 10 minutes.
  5. Stir in heavy cream and Parmesan cheese until combined. Serve hot with a drizzle of lemon juice.
