  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 1/2 cups uncooked long grain rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 1/2 cups chicken broth
  • 1/2 cup barbecue sauce
  • Salt and pepper to taste
  • Optional: Chopped green onions or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the sausage slices until browned; remove and set aside.
  2. In the same pan, sauté the chopped onion until translucent, about five minutes. Add minced garlic and cook for another 30 seconds.
  3. Stir in uncooked rice and toast for 2–3 minutes until lightly golden.
  4. Pour in chicken broth and barbecue sauce; scrape any bits from the bottom of the pan.
  5. Return sausage to the pan. Bring to a simmer, cover, and reduce heat to low. Cook for 18–20 minutes or until rice is tender.
  6. Let sit covered for five minutes off heat before fluffing with a fork.
