  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (cut into small cubes)
  • ¼ cup boiling water
  • 1 tablespoon coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches with sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Let sit for about ten minutes.
  3. In another bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until the mixture resembles coarse sand.
  4. Stir in boiling water until just combined to form a thick dough.
  5. Pour peach filling into a greased baking dish and dollop the biscuit topping over the peaches.
