  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh, canned, or thawed frozen)
  • ½ cup all-purpose flour (for streusel topping)
  • ⅓ cup brown sugar (for streusel topping)
  • ½ teaspoon ground cinnamon (for streusel topping)
  • ¼ cup cold unsalted butter (for streusel topping, cut into small cubes)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking pan.
  2. In a small bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Add cold butter cubes and work into crumbs; set aside in the fridge.
  3. Whisk together flour, baking powder, baking soda, and salt in another bowl.
  4. In a large bowl, beat butter with sugars until fluffy. Add eggs one by one, then mix in sour cream and vanilla until smooth.
  5. Gradually combine dry ingredients with wet mixture until just mixed. Fold in diced peaches gently.
