  • 3 cups apple juice or apple cider
  • 2 gallons cold water
  • 4 tablespoons fresh rosemary leaves
  • 5 cloves garlic, minced
  • 1 1/2 cups kosher salt
  • 2 cups brown sugar
  • 3 tablespoons peppercorns
  • 5 whole bay leaves
  • Peel of three large oranges

Instructions

  1. Gather all ingredients: apple juice, cold water, fresh rosemary, minced garlic, kosher salt, brown sugar, peppercorns, bay leaves, and orange peel.
  2. In a large pot, combine all ingredients and bring to a boil while stirring until the salt and sugar dissolve completely.
  3. Remove from heat and let the brine cool to room temperature.
  4. Place your turkey in a large brining bag or pot and pour the cooled brine over it until submerged. Seal tightly.
  5. Refrigerate for at least 16 hours but no longer than 24 hours.
  6. After brining, rinse the turkey under cold water for about 15 minutes and pat dry thoroughly with paper towels.
