  • 1 tbsp olive oil
  • 400g (6) sausages (chicken or turkey)
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all purpose flour
  • 1 litre/4 cups chicken or vegetable stock
  • 2 bay leaves
  • 100g/1/2 cup wild rice
  • 3 potatoes (medium, peeled and cut into chunks)
  • 375ml/1 1/2 cups single/light cream or coconut milk (for dairy-free)
  • Salt to taste

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Remove sausage from casing and crumble into the pot, cooking until golden brown.
  2. Remove sausage but keep drippings; add chopped onion, celery, and carrots to the pot. Sauté for about 10 minutes until softened. Stir in minced garlic and dried thyme, cooking for an additional 30 seconds.
  3. Sprinkle flour over vegetables and mix well to form a paste. Cook for 2 minutes.
  4. Slowly pour in chicken stock, stirring until smooth. Add bay leaves and wild rice; bring to a simmer and cook for 30 minutes.
  5. Stir in potato chunks, cooking for another 15 minutes until tender. Finally, mix in cream and season with salt.
