  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ¼ tsp ground cardamom
  • ½ tsp salt
  • ½ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs, room temperature
  • 1¼ cup canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, spices, and salt.
  3. In another bowl, mix together the canola oil, granulated sugar, light brown sugar, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Gradually add the dry mixture into the wet mixture. Stir gently until just combined.
  5. Pour the batter into a greased 9×5 loaf pan and spread it evenly. Bake for about 55 minutes or until a toothpick inserted into the center comes out clean.
  6. While your bread cools, beat together cream cheese and butter until creamy. Then add vanilla extract and powdered sugar while mixing until smooth. Adjust with milk as needed for desired consistency.
  7. Once the pumpkin bread has cooled completely, spread on the cream cheese frosting generously.
