  • ½ cup brown sugar
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda

  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Cook the pumpkin puree in a saucepan over medium heat for about 10 minutes until reduced.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Cream together the butter and sugars until light and fluffy, then mix in the cooled pumpkin puree and vanilla.
  4. In another bowl, whisk together flour, cornstarch, baking soda, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet mixture and fold in chocolate chips until just combined.
  6. Scoop dough into balls and place on the prepared baking sheet.
