  • 1/3 cup granulated sugar
  • 4 large egg yolks

  • 1 cup pumpkin puree

  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare mini pumpkins by slicing off tops and scooping out seeds.
  3. In a bowl, whisk egg yolks, sugar, vanilla, pumpkin puree, spices, and salt.
  4. Heat cream in a saucepan until steaming but not boiling.
  5. Gradually combine warm cream into the egg mixture while whisking continuously.
  6. Pour custard into prepared pumpkins or ramekins placed in a baking dish filled with hot water.
  7. Bake for 30 minutes until set around edges but slightly jiggly in center.
