  • 1/2 cup butter
  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)
  • Pinch of cream of tartar
  • 1 1/2 cups confectioner's sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare an 8×8 or 9×9 inch baking dish by lining it with parchment paper.
  2. Warm the milk until lukewarm.
  3. In a separate bowl, beat egg whites with cream of tartar until stiff peaks form.
  4. Melt the butter and let it cool.
  5. In another bowl, beat egg yolks and confectioner's sugar until pale. Mix in vanilla extract, cinnamon, pumpkin pie spice, and cooled butter.
  6. Stir in flour and pumpkin puree with a portion of warm milk.
  7. Gradually add remaining milk while mixing on low speed.
  8. Gently fold in beaten egg whites without deflating them.
  9. Pour into the prepared dish and bake for 60-65 minutes until set but slightly wobbly in the center.
  10. Cool completely before refrigerating for cleaner slices.
