  • 1/3 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/4 cup cream cheese, softened
  • Whipped cream (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter and granulated sugar until fluffy. Add egg and vanilla; mix until smooth.
  3. In another bowl, whisk flour and salt; gradually combine with wet ingredients to form dough. Chill for 30 minutes.
  4. Scoop dough into balls and place on baking sheet, creating wells in the center. Bake for 10–12 minutes until edges are golden.
  5. For the filling, beat cream cheese until smooth; add pumpkin puree, brown sugar, spices, heavy cream, and vanilla; chill for 30 minutes.
  6. Once cookies cool, fill wells with pumpkin mixture and top with whipped cream.
