  • 115 grams of granulated sugar
  • 79 grams of water
  • dash of cream of tartar or lemon juice for stabilizing
  • Orange and brown powdered or gel food coloring
  • 1 cup all-purpose flour
  • 1/4 cup coconut oil
  • 1/4 tsp salt
  • 4 tbsp ice cold water
  • Granulated sugar and cinnamon for dusting (optional)
  • 1/2 cup organic shortening or vegan butter
  • 3/4 cups + 2 tbsp confectioners sugar
  • Seeds from 1/4 vanilla bean (or gluten-free vanilla)
  • pinch of salt
  • dash of non-dairy milk
  • 1 tbsp pumpkin puree
  • 2 tsp pumpkin pie spice
  • 1/2 tsp vanilla

Instructions

  1. Prepare your workspace by cleaning mixing bowls thoroughly.
  2. Mix almond meal and powdered sugar, sifting to remove lumps.
  3. Whip egg whites until soft peaks form; gradually add granulated sugar while continuing to whip until glossy.
  4. Gently fold meringue into the dry mixture until smooth. Pipe onto lined baking sheets.
  5. Bake at 300°F for 12-14 minutes until shells form feet.
  6. Make pie crust cutouts from flour, coconut oil, and water; bake until golden brown.
  7. Assemble macaron shells with pumpkin spice frosting and pie crust toppers.
