  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree

  • 1 Teaspoon vanilla extract

  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham cracker pieces (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, vanilla extract, and optional food coloring.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually combine dry ingredients with wet mixture until just mixed.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto a baking sheet with space between each.
  8. Press extra vegan marshmallows and chocolate chips onto each cookie ball before baking.
  9. Bake for 12 to 14 minutes until edges are golden but centers are still soft.
  10. Allow cooling on the sheet for a few minutes before transferring to a wire rack.
