  • 12 cups ice cubes
  • Cold oat milk (to taste)
  • ¼ cup packed light brown sugar
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract
  • ½ tsp maple extract (optional)

Instructions

  1. Prepare the syrup by whisking brown sugar, pumpkin puree, and cinnamon sticks or pumpkin pie spice with warm water in a saucepan. Simmer on low for 2-3 minutes until slightly thickened.
  2. Stir in vanilla extract and maple extract if using; strain through a fine sieve for smooth texture.
  3. In a shaker, combine one double shot of espresso with 1-2 tablespoons of syrup and add ice cubes. Seal tightly and shake vigorously for about 20-30 seconds.
