  • 1/2 cup pumpkin puree, blotted
  • 1 egg yolk
  • 1 tsp pumpkin pie spice
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 cups white chocolate chips

  1. Preheat oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  2. Blot pumpkin puree with paper towels to remove excess moisture.
  3. In a bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in blotted pumpkin puree, egg yolk, and pumpkin pie spice until combined.
  5. Fold in flour and baking soda gently until no flour streaks remain.

  7. Scoop dough onto prepared baking sheet, spacing them two inches apart.
