  • 2 cups cooked jasmine rice (preferably day-old)
  • 3 cups shredded cabbage (mix of green and red)
  • 1 cup sliced cucumber
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, grated or julienned
  • 1/2 cup chopped sugar snap peas
  • 2 green onions, sliced
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce or tamari
  • 1 tbsp chili crisp
  • 2 tbsp peanut butter or tahini
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1/2 inch piece ginger, grated
  • Salt and pepper, to taste

Instructions

  1. Prepare the dressing by whisking together sesame oil, soy sauce or tamari, chili crisp, peanut butter or tahini, rice vinegar, lime juice, honey, grated ginger, salt, and pepper until smooth.
  2. In a skillet over medium heat, add sesame oil and sauté the day-old jasmine rice until crispy and golden brown.
  3. In a large bowl, combine shredded cabbage, cucumber, red bell pepper, grated carrot, sugar snap peas. Pour the dressing over the veggies and mix well.
  4. Serve by topping each portion with crispy rice and garnishing with toasted sesame seeds.
