  • 2 packs instant ramen noodles (discard flavor packets)
  • 1 cup bell peppers, chopped
  • 1 cup carrots, shredded
  • 1 cup cucumbers, sliced
  • 4 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar (optional)

Instructions

  1. Cook the ramen noodles according to package instructions. Drain well and rinse under cold water.
  2. While noodles cool, chop bell peppers, shred carrots, slice cucumbers, and finely chop green onions.
  3. For the dressing, whisk together soy sauce, rice vinegar, sesame oil, and optional sugar in a bowl.
  4. In a large mixing bowl, combine cooled ramen noodles with chopped vegetables. Pour dressing over the top and gently toss to coat.
  5. Garnish with chopped cilantro before serving.
