  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces turkey sausage (or plant-based sausage)
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth (or vegetable broth)
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup coconut cream (or heavy cream)
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion with salt and pepper until translucent, about 3-4 minutes. Stir in minced garlic and Italian seasoning for 30 seconds, then add tomato paste and cook for another minute.
  2. Add turkey sausage to the pot and cook until browned, breaking it apart as it cooks.
  3. Stir in chicken broth and crushed tomatoes; season with salt and pepper. Bring to a simmer.
  4. Add ravioli to the pot and simmer on low for 3-5 minutes until cooked al dente.
  5. Fold in fresh spinach and coconut cream until the spinach wilts. Adjust seasoning before serving.
