  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

Instructions

  1. Preheat oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 1 hour until soft.
  2. Place quartered red potatoes in a pot, cover with cold water, add salt, and bring to a boil. Simmer for about 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot. Squeeze roasted garlic cloves from their skins into the pot.
  4. Warm half-and-half and butter until melted. Pour over potatoes and season with salt and pepper. Mash until creamy but slightly lumpy.
