  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 cup fresh basil (roughly chopped)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp fresh thyme (minced)
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 tbsp sugar
  • 1 28 oz. can San Marzano tomatoes (crushed)
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F. Arrange tomato halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 1 hour.
  2. In a large pot over medium-high heat, add olive oil or butter; sauté diced onion until translucent (about 5 minutes).
  3. Stir in minced garlic, thyme, salt, and pepper; cook for another minute.
  4. Add crushed San Marzano tomatoes, fresh basil, and sugar; simmer on low heat for 10 minutes.
  5. Incorporate roasted tomatoes and chicken stock; simmer for an additional 30 minutes.
  6. Blend the soup until smooth using an immersion blender or by carefully transferring it in batches to a blender.
  7. Return soup to pot and stir in heavy cream; heat through.
  8. Serve immediately topped with crunchy croutons if desired.
