Instructions

  2. Rinse and dry cherry tomatoes; place them in a bowl.
  3. Slice off the top of the garlic head to expose cloves.
  4. Drizzle tomatoes with olive oil; season with salt, pepper, and red pepper flakes.
  5. Spread tomatoes and garlic on a lined baking sheet; roast for 25-30 minutes.
  6. Cook pasta according to package instructions; reserve 1 cup of cooking water before draining.
  7. Squeeze roasted garlic into a bowl; add tomatoes and any juices.
  8. Mash gently; stir in remaining olive oil and balsamic vinegar if using.
  9. Toss cooked pasta with the tomato mixture; adjust consistency with reserved pasta water.
