  • 1 pound fresh salmon fillet, skin removed
  • 4 cups fresh spinach, washed and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Season the salmon with salt, pepper, and lemon juice. Heat olive oil in a skillet over medium heat and cook the salmon for 4-5 minutes per side until cooked through. Flake into pieces.
  3. In the same skillet, sauté garlic until fragrant, then add spinach and cook until wilted.
  4. Reduce heat, pour in heavy cream, and stir in Parmesan cheese until melted. Add lemon zest, lemon juice, and red pepper flakes; simmer for a few minutes.
  5. Combine cooked pasta with the sauce and gently fold in flaked salmon. Adjust consistency with reserved pasta water if needed.
  6. Serve immediately, garnished with parsley.
