  • ⅔ cup light brown sugar
  • ¾ cup cocoa powder
  • 3 large eggs
  • ⅓ cup buttermilk (made with whole milk and vinegar)
  • 1 cup sour cream
  • 1 cup granulated sugar (for frosting)
  • 200g dark chocolate (70% cocoa)
  • Sea salt (for garnish)
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • ⅔ cup vegetable oil
  • ¾ cup boiling water
  • 5 tbsp unsalted butter
  • ½ cup heavy cream, warmed up
  • ¾ tsp salt (for frosting)
  • 1.5 tsp vanilla
  • 8 oz cream cheese, room temp
  • ⅓ cup cocoa powder (for cream cheese layer)
  • 1 cup powdered sugar (for cream cheese layer)
  • ½ cup salted caramel sauce (for cream cheese layer)
  • 1 cup heavy cream, cold (for cream cheese layer)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two cake pans.
  2. In a bowl, mix flour, sugars, cocoa powder, baking powder, baking soda, and salt. Add eggs, oil, buttermilk, sour cream, and boiling water. Mix until smooth.
  3. Pour batter into prepared pans. Bake for about 30-35 minutes or until a toothpick comes out clean.
  4. While baking, make the salted caramel sauce by melting sugar over medium heat until golden brown; add butter and warmed cream while stirring until smooth. Mix in salt.
  5. For the frosting, beat cream cheese with cocoa powder and powdered sugar until creamy; slowly add chilled heavy cream until soft peaks form.
  6. Once cakes are cool, layer with frosting and salted caramel between layers and on top.
