  • 2 acorn squash
  • ½ pound ground turkey
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh thyme
  • 2 sage leaves (minced)
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Halve the acorn squash and scoop out the seeds. Place cut-side down on the baking sheet.
  3. Bake the squash for about 20 minutes until fork-tender.
  4. In a skillet over medium heat, cook the ground turkey until browned.
  5. Add olive oil, diced onions, and sauté until softened. Mix in kale, garlic, celery, apple, and herbs; cook until combined.
  6. Stir in cooked turkey and some scooped squash flesh into the mixture.
  7. Stuff each squash half generously with the filling.
  8. Return to the oven for another 15 minutes, then top with feta cheese and nuts before baking for an additional 5 minutes.
