  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8.5 ounces corn muffin mix

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine grated zucchini, onion, half of the cheddar cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, black pepper, and corn muffin mix. Mix well.
  3. Transfer the mixture to the prepared baking dish and top with the remaining cheddar cheese.
  4. Bake for about 50 minutes until golden brown and set.
